Job Summary: COOK! And oversee all kitchen operations, ensuring high-quality customer experience and food, efficiency, and a clean, safe work environment. Must manage kitchen staff, control inventory, and maintain a clean, efficient work environment to support the restaurant’s operational goals. A successful Carryout GM will maintain adequate staffing to ensure smooth shift execution, while actively supporting all areas of the kitchen during busy times
Key Responsibilities
- Kitchen Operations: Oversee food preparation, cooking, and presentation to ensure consistency, quality, and adherence to Benny’s Pizza’s recipes and standards
- Staff Management: Hire, train, schedule, and supervise carryout kitchen staff (prep, cooks, dishwashers, customer service reps), fostering a productive and team-oriented environment
- Inventory Control: Monitor food rotation and supply inventory, and manage stock levels to minimize waste and ensure availability of ingredients
- Food Safety Compliance: Enforce health and safety regulations, including proper food handling, storage, and sanitation practices; ensure compliance with local health codes
- Cost Management: Control food costs by monitoring portion sizes, reducing waste, and optimizing inventory usage; report on kitchen-related expenses
- Equipment Maintenance: Ensure kitchen equipment is maintained, cleaned, and functioning properly; coordinating repairs as needed
- Quality Assurance: Conduct regular checks on food quality, preparation times, and presentation to meet customer expectations and brand standards
- Collaboration: Work closely with GM, Head Chef, and BOH Dining Room Manager to coordinate operations, address customer feedback, and resolve operational issues
- Record-Keeping: Maintain accurate records of inventory, food safety logs, and staff schedules; contribute to shift reports as required
- Menu Support: Assist in implementing new menu items, specials, or promotions, including training staff on preparation techniques
Qualifications
- Experience: 2-3 years in a fast-paced restaurant environment, with at least 1 year in a supervisory or management role. Pizza experience is great, but not required
- Skills: Strong leadership, organizational, and time-management skills; ability to work in a fast-paced environment and handle multiple priorities, strong problem-solving skills and ability to hand high-pressure situations
- Knowledge: In-depth understanding of food safety regulations, inventory management, and kitchen operations
- Education: High school diploma or equivalent required. Culinary training is a plus
- Physical Requirements: Ability to stand for long periods, lift up to 50 lbs, and work in a hot, fast-paced environment
- Availability: Flexible schedule, including evenings, Fridays and Saturdays. Closed Sundays!
Work Environment: Fast-paced kitchen setting with frequent exposure to heat, noise, and cleaning chemicals. Involves regular interaction with kitchen staff, carryout customers, and collaboration with the top management team.
